Chickpea Spread

    Take one can of rinsed chickpeas and mash with a fork in a mixing bowl.
    Add the remaining whole chickpeas along with all other ingredients and mix well.
    Refrigerate covered to let flavors mix.
    Serve on toast, in a pita, or with fresh greens.


    2 15-oz can chickpeas (garbanzo beans), rinsed and drained
    1/4 cup onion, finely chopped
    1/4 cup celery, finely chopped
    1/4 cup carrot, finely chopped
    1 teaspoon cumin
    2 teaspoon coriander
    1 teaspoon dill
    1/4 cup lemon juice
    salt and pepper
