French Lentils

    Heat olive oil in a small pot and add thinly chopped onion.
    After sauteing it until its golden, add carrot cut into small cubes.
    Next add a cup of lentils and 3 cups of water.
    Add all of the spices and leave to cook covered for about 25 minutes on low to medium heat.
    After the lentils are soft and the water is absorbed, take the pot off the stove and allow to cool down for few minutes.
    Serve and enjoy.


    1 cup green lentils
    3 cup water
    1/2 white onion or leek
    1 carrot
    1/4 teaspoon allspice
    1/2 teaspoon herbs de provence
    1 bay leaf
    Pinch of salt and pepper
    1 tablespoon olive oil
