    Lightly saute onion in a bit of oil until translucent.
    Add all ingredients except mint. Let simmer on low for approximately 20 minutes.
    Add salt, pepper, and chili pepper to taste.
    Serve the stew with mint garnish, with bread, rice, or grain of your choice.


    3 can cooked navy beans
    1 bunch fresh mint
    1 medium onion
    3 large tomatoes
    1 small can tomato paste
    optional jalapeno pepper, cayenne, or Turkish crushed red pepper
    salt and pepper to taste
